I have introduced a few meat-less meals a week into our nightly dinner rotation without too many complaints in our house :-) I water down my son’s juices and my husband and I drink only water most of the time.

I also discovered that frozen produce can actually be some of the freshest that you can buy. It is pretty convenient with little waste since you can use what you need and leave the rest in the freezer for another night!
